Do I have to ask for a deposit?
Yes: the discounted slot comes from the deposit kept after a late cancellation. The deposit is part of Pro; a refilled slot has a fixed price, under “What it costs”.
And for the one who cancelled?
You keep her deposit only according to the cancellation window she saw when booking. And the discounted slot is never offered to her.
Is the discount capped?
Yes: it never goes above the kept deposit, nor above the maximum percentage you set.
